Winemaking: the grapes, just harvested, undergo a careful and soft pressing as whole clusters. The obtained must is strictly protected from oxygen, separated from the press must, and clarified by natural sedimentation. Fermentation takes place at controlled temperature entirely in stainless steel wine vats.
Ageing: entirely in stainless steel tanks, managing the fine lees with regular batonnages for 4 to 6 months. After 3-4 weeks of bottle ageing, the wine fully expresses its fresh and fruity characteristics typical of Sannio white wines.
Organoleptic characteristics: straw yellow color with greenish reflections, floral aroma of acacia, linden, and thyme. Fresh taste, endowed with good aromatic persistence.
