Vinification: The freshly harvested grapes undergo careful and gentle whole-cluster pressing. The free-run must obtained, rigorously protected from oxygen, is separated from the press must and clarified by natural sedimentation. Fermentation takes place at a controlled temperature entirely in stainless steel vats.
Aging: Entirely in stainless steel tanks, through fine lees management with regular bâtonnages for 4 to 6 months. After 3-4 weeks of bottle aging, the wine fully expresses the fresh and fruity characteristics typical of Sannio white wines.
Organoleptic Characteristics: Straw yellow color with greenish reflections, fruity aroma of apple, pineapple, and wildflowers with mineral tones. On the palate, soft with high aromatic persistence.
